So Easy Jam and Crushed Cracker Tart
Ingredients
2 ½ sleeves of crackers, such as Club or Ritz work best
7 tablespoons unsalted butter, softened
1/4 cup sugar
1 3/4 cups (about 20 ounces) jam or preserves (you can also use canned pie filling for a slightly less sweet version)
Serve with whipped cream if desired.
Directions
Preheat the oven to 350 degrees F.
Pulse your crackers in a food processor until finely ground. Next, add the butter and sugar then pulse again until thoroughly mixed. Remove a heaping tablespoon of the cracker mixture and set aside for use as a topping later.
Spread the mixture out into a 9-inch fluted tart pan with a removable bottom, set on a cookie sheet and press evenly along the bottom and up the sides.
Bake until light golden, about 15 minutes. Lightly press down on the crust if it has puffed up on the bottom.
Spoon the preserves or pie filling into the tart shell and gently smooth to spread evenly. Sprinkle the reserved crumbs on top. Bake until the jam is a shade darker and the edges are bubbling slightly, 20 to 25 minutes. Cool completely on a rack.
Serve at room temperature with whipped cream if desired.
